It was changed to that way because the other way was a) unintuitive to many people and b) made damage conversion undesirable in many cases. If your physical damage is converted to fire damage, it makes sense for that to be increased by fire damage increases, because it is fire damage. No type of leeching works for AoF except the support gems (same with spells). And I hope they don't put in immunes regardless of AoF — it's just a hassle for almost everyone.
